TWO CANNING PARTIES: onion scapes, sauerkraut

The first canning party was about a week ago, not sure. With Elisha, Dave, Mere and Ben Hur. Canned onion scapes.

The second Canning Party was this morning, with not only Green Acres folks present, but a couple, Tom and Emily, who have ten acres south of Bloomington, eight of which is forest, and 8000 square feet of the remaining two acres is garden.

I asked him how big is our garden? He thinks it’s about the same size as theirs.

When I went over to take pics, we went around the table asking about one’s life purpose. Tom: “I’m good at planning ahead.” Emily: “I can do the logistics of chaos.” Whew!

When I walked in the door they were commenting on how differently men and women cut cabbage!

Sauerkraut, packed with salt, from the top before being closed.

I asked Elisha, “What are the plastic thingies on top of the closed jars?”

Her answer: “When sauerkraut is fermenting it releases air, so those toppers allow air to get out but prevent other things like bacteria/dust from getting in!”
